Chicken Enchilada Recipe

4 chicken breasts (shredded cooked chicken)
28oz Las Palmas green chili
1 onion (optional)
1 package of corn tortillas
6-8 cups of shredded cheese sharpe cheddar or mexican style cheese
salt
pepper



You'll need a glass baking dish large enough to hold 6 enchiladas. Preheat oven to 350°F.
Trim off any excess fat or skin off of chicken breasts. Wash thoroughly and place chicken in a deep pan Add salt and pepper. Bring to a boil, then down to a simmer. Cover with lid and let cook till chicken is easy to shred with fork.
Discard broth. Shred chicken with fork and set aside. Combine all cheeses and onion in a small bowl.
Open small can of green chili sauce and pour on bottom of glass baking dish. Fill each tortilla with shredded chicken, cheeses, onion, and top with 1 tbsp. of green chili sauce. Reserve half the cheese and onion combination.
Roll tortillas and place in baking dish seam side down. Take remaining green chili sauce and thoroughly pour over all. Top with remaining cheeses, onion,  Bake in 350°F oven for 20 to 25 minutes or until heated through and cheese has melted. Let stand 5 minutes. Top with sour cream or your favorite hot sauce

Halloween Cards

These 2 cards are not as great as most of these ladies out there but I did make them. One day I will be as good as most of the ladies out there. First card is the spider card, spiders are from DoodleCharm & are popped out with 3d dots , eyes are orange brads



Second card is just a lil ghost w/ 2 lil bats. I used 3 colors for the ribbon ran it through the sticker maker (was easy that way to make it stay on card with ribbon). Nothing big about this card just made it for my sister.

Goodies I got

This is my first time blogging & my very first post so please bare with me. I will be adding my projects here soon. Having 4 kids takes up all my time so it's very hard to get my projects done & especially get on the computer without having at least one kid wanting something.


So I went to Michael's to get a diorama for my daughter & I stopped by the clearance section & found dcwv paper pads on clearance for $3.99. Yes I grabbed them figure I would use them for something especially at that price. Used my Martha Stewart 50% coupon on a stamp set & also got an extra 10% off for being military. I got the stamp set for $4.74. I walked next door to Ross & found more paper for $2.99 & 10 rolls of ribbon for $8.99. They had punches but have way too many of them but punches were $2.99.
